He describes and informs the reader on exactly what a lobster is.

Then he goes on explaining how lobsters were once fed to really poor people, now they are one of the finest crustaceans.

He then begins to show the festivals bad side by explaining the lack of napkins and space at the festival

Talks about the lobster clinging to its cage before it is cooked, using pathos and metaphors to compare the lobster to a human.
